Making your own seitan is really simple and so delicious! After you've made it a few times, feel free to experiment with the flavors that you add to your "meat." These kabobs take very little effort to prepare, and the sauce can be prepared 1 day ahead of time.
Serves 4 as an entree

Cook Time: 30 minutes
Ingredients:
- 6 cups vegetable broth
- 1/3 cup red wine vinegar
- 2 T. dry red wine (optional)
- 2 t. salt
- 1 t. sugar
- 1 2/3 cups water
- 2 2/3 cups vital wheat gluten
- 3 T. prepared ketchup
- 2 cups plain unsweetened soy yogurt, such as Wild Wood
- 2 t. Dijon mustard
- 2 T. and 1 t. honey, divided
- 1/4 cup ground almonds
- Cayenne pepper and salt, to taste
- Flat bread, whole-grain bread, rice or other grain of your choice, for serving
Preparation:
1. In a medium to large stockpot, bring the vegetable broth to a low boil over medium heat. Preheat the oven to 350 F.
2. In a medium-sized bowl , combine the vinegar, red wine, salt, sugar and water, mixing until well combined. Add in the vital wheat gluten and mix until forming a tough dough.
3. Knead the dough until it is slightly pliable, about 2-3 minutes. Divide the dough into small, bite-sized pieces, keeping in mind that the seitan will expand as it cooks.
4. In a lightly oiled skillet over medium-high heat, brown the pieces of seitan on both sides (this will keep your "meat" from falling apart in the broth). As the seitan pieces are browned, place them in the boiling broth and allow them to simmer for about 30 minutes, or until they have expanded and risen to the surface. Remove the seitan with a slotted spoon or spatula and place in a small ovenproof dish just large enough to fit the seitan.
5. In a small bowl, combine the ketchup with the 2 T. honey and mix well to combine. Pour this over the seitan and bake for about 6 -8 minutes.
6. Meanwhile, make the dipping sauce. In a small bowl, combine the soy yogurt, mustard, remaining honey and ground almonds until well mixed. Add the cayenne pepper and salt to taste.
7. Assemble the skewers. Place 4-6 pieces of seitan on each skewer and serve hot with the dipping sauce and bread or grain of your choice.
