Dairy-free Valentine's Day Menu for the Seafood Lover

This fresh-tasting meal begins with savory dill-scented salmon cakes served over fresh or steamed greens. For this menu, I recommend serving this dish over fresh spinach or aruglua, and sprinkling some fresh lemon zest over the cakes for color. Following is a wine-accented risotto crimped with rich shrimp and bedecked with lemon zest and pepper. The dessert, while simple in appearance, is quite rich is flavor. To add some fun Valentine's Day flair, shape the raspberries or fruit of your choice into a heart atop the custard.
