Raw Cream of Carrot Soup

This soup is so easy, healthy and satisfying, perfect for healthy weekday meals as well as a chilled first course to a dairy-free dinner party.

Serves 4

Prep Time: 5 minutes

Ingredients:

  • 1 cup finely ground raw cashews
  • 2 cups fresh raw carrot juice
  • 2 T. agave nectar
  • 1 T. fresh lemon juice
  • 1 T. minced fresh ginger
  • 1 t. freshly ground coriander seed
  • 1/2 cup fresh coconut juice or water
  • 1/2 t. sea salt, plus more to taste
  • water, as desired
  • Fresh parsley, cilantro and dill, for garnishing

Preparation:

1. Place all of the ingredients except the fresh herbs in a blender and process until smooth and creamy, adding salt to taste and water until the soup is the desired consistency. Chill for 30 minutes before serving. Garnish with fresh herbs, carrots and nuts if desired.
