Light Goddess Dressing

Significantly lower in fat that store-bought varieties, this dairy-free Goddess Dressing is elegant, but so simple to make!

While I still wouldn't call this recipe low in fat, it is significantly lighter than traditional goddess dressing recipes that often call for mayonnaise and sour cream as a base, as well as the popular store-bought variety that is incredibly high in calories and fat. This recipe is so simple to make that it has become a workweek staple in my home. I love serving this over a mixed greens salad, lightly steamed beets, poached fish or even cold pasta.

Makes about 2 cups

Prep Time: 5 minutes

Ingredients:

  • 3 green onions, whites removed, chopped
  • 3 T. finely chopped fresh parsley
  • 2 large cloves garlic
  • 1 ½ cups plain unsweetened soy yogurt
  • 2 T. cider vinegar
  • 1 T. lemon juice
  • 1 T. low-sodium soy sauce
  • 1 t. salt,
  • 2 T. olive oil
  • 2 T. tahini

Preparation:

1. Place all of the ingredients in a blender or food processor and blend until well combined. Serve cold.
