Serves 4 to 6

Prep Time: 5 minutes
Cook Time: 40 minutes
Ingredients:
  • 4 large sweet potatoes
  • 2 T. olive oil
  • ½ T. cayenne pepper
  • 2 T. brown sugar
  • Salt, to taste
Preparation:

1. Preheat oven to 400 F. Lightly oil a large baking sheet.

2. Leaving the skins on, cut the potatoes into 1/2"-thick wedges.

3. Toss the potato wedges with the oil, and place on prepared sheet. Bake for about 30 minutes, flipping occassionally. Remove pan from oven and sprinkle wedges with cayenne and brown sugar. Return to oven for 10 minutes more or until fries are lightly browned and sugar has begun to caramelize.
