Apple Brown Betty

Somewhere between a crisp and a bread pudding, apple brown betty is a comforting dessert that's so easy to prepare. While most recipes call for butter, this recipe substitutes with soy margarine and uses panko bread crumbs in place of other varieties that often contain dairy-derived ingredients.

Makes one 8"x8" brown betty

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Ingredients:

  • 3 cups panko bread crumbs
  • 6 T. dairy-free soy margarine, melted
  • 3 pounds gala or fuji apples, cored, peeled and chopped into pieces
  • 3 T. fresh lemon juice
  • 1/2 cup packed dark brown sugar
  • 3/4 t. cinnamon
  • 1/4 t. nutmeg
  • Dairy-free Ice Cream (optional)

Preparation:

1. Preheat the oven to 375 F. Lightly oil an 8"x8" cake pan or casserole dish.

2. Spread the bread crumbs on a large baking sheet and bake for about 7-9 minutes, or until lightly toasted. Transfer the toasted crumb to a bowl and let cool completely. Toss with the melted soy margarine until well mixed.

3. Place the apple pieces in a large mixing bowl and toss with the lemon juice, brown sugar, cinnamon and nutmeg until well coated. Stir in half of the bread crumbs. Transfer the apple mixture to the prepared cake pan. Sprinkle with the remaining bread crumbs and cover the dish with foil.

4. Bake for 40 minutes, or until the apples are bubbly. Remove the foil and bake for an additional 10 minutes, or until the bread crumbs are golden brown and the apples are very tender. Let cool for about 10 to 15 minutes. Serve warm with dairy-free ice cream if desired.

Horrible. Do not try. You might as well eat toasted panko. Used Granvenstine apples which are lovely for cobbler and or pies. Apples were fresh and juicy from Annapolis Valley Nova Scotia.Cobbler was so so dry. We tried to doctor it up after the original and all it was nothing but panko. What a waste of apples .Yech.
