You might think that it sounds strange, but avocados are amazing in this creamy chilled pie. Feel free to substitute part of the lemon juice with lime juice for more of a twist on key-lime pie, if you desire. While I prefer to make my own dairy-free graham cracker crust for this recipe, I have sometimes purchased a dairy-free store-bought variety when I'm in a pinch for time.

Cook Time: 10 minutes

Total Time: 50 minutes

Yield: 1 9" pie

Ingredients:

  • 1 Recipe Dairy-Free Graham Cracker Crust or store-bought dairy-free variety
  • For the Filling:
  • 1 8-ounce tub dairy-free soy cream cheese, such as Tofutti
  • 1/2 cup powdered sugar
  • 1/2 cup fine granulated sugar
  • 1/4 cup lemon juice
  • 1/8 t. salt
  • Flesh from 2 medium ripe hass avocados
  • For the Meringue Topping:
  • 4 large egg whites
  • 1/2 cup fine granulated sugar

Preparation:

1. Prepare and bake the Dairy-Free Graham Cracker Crust in a 9" pie plate according to the recipe. Allow crust to cool completely before filling.

2. Prepare the filling. Using an electric hand mixer, beat the dairy-free cream cheese until smooth. Add the sugars and beat until creamy. Add the lemon juice, salt and avocado flesh, and beat until completely smooth and combined. Pour into the prepared crust and chill in the refrigerator for 4 hours before topping with the meringue.

3. Preheat the oven to 400 F.

4. Make the meringue. In a clean, dry bowl, beat the egg whites with the cream of tartar using an electric hand mixer on a medium speed setting until soft peaks form, about 2-3 minutes. Gradually add the sugar, turn up the mixer speed to high, and beat until stiff peaks form, about 4-6 minutes more. Using an offset spatula, gently spread the meringue on top of the chilled pie, using the spatula to create decorative peaks in the topping. Place in the oven for about 3 minutes, or until lightly browned. Serve immediately.
