Mocha Muffins

Muffins are really fun, easy-to-make breakfast treats and they are versatile as they are easy to transport. This dairy-free recipe is a decadent excuse to have chocolate in the morning, which, in my opinion, is why the Mocha latte was invented in the first place! The combination of coffee and chocolate is one that is so pleasing to the palate; the rich, bitter sensation of espresso beans adds dimension to the sweet and dense flavors of dark dairy-free chocolate, and the end result is irresistible.

For a lighter version of this recipe, replace the 1/4 cup canola oil with 1/4 cup applesauce.

Makes 12 muffins

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 ½ cups all-purpose flour
  • 2/3 cup sugar, plus more for sprinkling
  • ¼ cup pure cocoa powder
  • 2 ½ t. baking powder
  • ½ t. salt
  • ¼ cup prepared espresso or strong drip coffee
  • ½ cup unsweetened plain soymilk
  • ¼ cup canola oil
  • 1 t. apple cider vinegar
  • ½ cup plain soy yogurt
  • ½ cup dark, dairy free chocolate chips
  • 2 T. Egg Replacer mixed with 3 T. hot water, (or 2 egg whites lightly beaten)

Preparation:

1. Preheat the oven to 375 F. Line a 12-cup muffin pan with muffin-cup liners.

2. In a medium-sized mixing bowl, combined the flour, sugar, cocoa powder, baking powder and salt until well mixed. In another small bowl or measuring pitcher, combine the espresso, soymilk, canola oil and vinegar. Set aside.

3. In a small saucepan over low heat, combine the soy yogurt and dairy-free chocolate chips. Stirring frequently, cook until the mixture is consistent and the chocolate is completely melted, about 2-3 minutes. Remove from heat.

4. Using an electric hand mixer at a medium setting, beat the soymilk mixture, the chocolate mixture and the Egg Replacer (or egg whites) mixture into the dry ingredients until just combined. Pour the batter into the prepared cups, sprinkle lightly with sugar, and bake until a toothpick or fork inserted into the center of a muffin comes out clean, about 15-20 minutes. Serve warm or at room temperature, dusting with powdered sugar if desired.
