These treats are truly delightful as snacks and healthy desserts. I prefer to use this Homemade Raw Almond Milk Recipe for this recipe, but feel free to use another raw nut milk of your choice.

Makes about 24 dates

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 1/2 cup raw almond milk
  • 1/2 cup maple syrup or agave nectar
  • 3/4 cup young coconut meat
  • 2 T. coconut oil
  • 1/2 cup unsweetened shredded coconut, plus more for topping
  • 1/4 sea salt
  • 24 Medjool dates, pitted

Preparation:

1. In a blender, combine the raw almond milk, maple syrup or agave, young coconut meat, coconut oil, shredded coconut and salt, process until the mixture is well combined. (It will not be completely smooth, but will contain bits of the shredded coconut.) Place about 2 T. of the mixture into each of the dates. Top the dates with additional shredded coconut, chill in the refrigerator for 15 to 20 minutes, and serve.
