Peanut Butter Pomegranate Sandwich

Peanut Butter and Pomegranate sandwich. A fresh take on the classic PB & J!

This sandwich is a new take on the classic peanut butter and jelly. If you are like many moms of dairy-free kids, you make A LOT of peanut butter and jelly sandwiches for lunches, so try this one out for a fun, healthy change! Although you can add a drizzle of maple syrup, agave, honey or another sweetener, I usually make mine without--it's really good without any added sugar!

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 1 sandwich

Ingredients:

  • Per Sandwich:
  • 2 slices toasted whole grain bread
  • 2 heaping T. natural peanut butter
  • 3 T. fresh pomegranate seeds (also called arils)
  • Drizzle of maple syrup, agave, or honey (optional)

Preparation:

1. Spread the peanut butter generously on one of the slices of toasted bread. Sprinkle the pomegranate seeds in a single layer on top of the peanut butter. Top with the remaining slice of toasted bread, and enjoy!
