Grilled Cheese Sandwiches

Toasted grilled cheese is quick comfort food for kids, and in this dairy-free rendition of the classic sandwich, it's healthy, too!

Makes 6 sandwiches

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 12 slices whole-grain bread
  • Olive oil, for brushing
  • ½ cup nutritional yeast
  • ¼ cup soymilk powder
  • 1 T. Cornstarch
  • 2 T. Oil
  • ½ cup fat-free soy mayonnaise
  • 1 cup soymilk, such as Silk
  • 1 t. salt, plus more to taste

Preparation:

1. Preaheat the oven to 400 F. Lightly oil a large baking sheet.

2. Using a pastry brush, lightly brush both sides of the bread slices with oil. Place on the prepared baking sheet and bake until toasted, flipping once, about 7 minutes. Remove from oven and set aside.

3. Make the cheese sauce. In a small bowl, combine the nutritional yeast, soymilk powder and cornstarch. Set aside.

4. In a medium-sized bowl, combine the oil, soy mayonnaise and soymilk, whisking until well combined. Add the dry ingredients and 1 t. salt to the mixture, whisking until lumps are dissolved (a few lumps will still remain but will dissolve while cooking).

5. In a heavy-bottomed skillet over medium heat, heat the sauce mixture, stirring constantly until desired consistency. Salt to taste.

6. Place six of the slices of bread on individual serving plates. Pour the cheese on top of each of the slices, then top with the remaining six slices. Cut each sandwich in half diagonally and serve warm.
