Vegan Raspberry Gelato

This is one of the easiest, healthiest ice cream recipes you will ever make, and it's dairy-fre, egg-free, and gluten-free so it's suitable for alternative diets. Feel free to experiment with different types of nuts, liquid sweeteners and berries!

Prep Time: 2 hours

Total Time: 2 hours

Yield: 4-8 servings

Ingredients:

  • 8 cups frozen raspberries, thawed slightly
  • 2 1/2 heaping cups finely ground cashews
  • 1 1/4 cup maple syrup
  • Pinch of salt

Preparation:

1. Combine all of the ingredients in a blender and process until creamy and smooth. Pour into a metal loaf pan and place in the freezer for 1 hour.

2. Return the mixture to the blender and process again until smooth. Return the mixture to the loaf pan and place in the freezer for 1 hour more.

3. Serve and enjoy!
