Most recipes for muesli bars contain an almost frightening amount of butter and sugar, but these bars use maple syrup for sweetnness and a combination of tahini, ground nuts and soy yogurt to add richness.
For this recipe, I really like to make my own muesli, such as this simple homemade muesli, but any dairy-free store-bought variety (preferably one that contains a mixture of oats, nuts and dried fruits), will do as well.
Makes 12-16 bars

Ingredients:
- 3 cups muesli, either store-bought or homemade (see Head Note)
- ½ cup oat flour
- ¼ cup flax seeds
- ¼ cup finely ground cashews
- ¼ cup packed dark brown sugar
- ¾ cup maple syrup
- ¼ cup tahini
- 2/3 cup dairy-free soy yogurt
Preparation:
1.Preheat the oven to 375 F. Line two 8” x 8” square baking pans with parchment paper and set aside.
2. In a medium-sized mixing bowl, sift together the muesli, oat flour, flax seeds, cashews and brown sugar until well combined. In a small mixing bowl, whisk together the maple syrup, tahini and soy yogurt. Add the wet ingredients to the dry, mixing until well combined. Spread into the prepared pans and bake for 20-25 minutes, or until golden brown. Transfer to a wire cooling rack and allow to cool completely before cutting into bars.
