This granola recipe is favorite of mine; bing cherries are such a nice surprise in the morning, especially with shredded coconut and almonds! Feel free to add other dried fruits and nuts of your choice; candied ginger is always a nice touch around the holidays.

Makes about 14 cups

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 8 cups rolled oats
  • 1 1/2 cups wheat germ
  • 1 1/2 cups millet
  • 1 cups slivered almonds
  • 1 cup finely chopped pecans
  • 1 cup finely shredded unsweetened coconut
  • 1 cup sunflower seeds
  • 1 T. cinnamon
  • 1 1/2 t. salt
  • 1/3 cup dark brown sugar
  • 1 cup maple syrup
  • 1 cup canola oil
  • 2 t. vanilla
  • 2 cups dried Bing cherries

Preparation:

1. Preheat the oven to 325 F. Set aside two large ungreased baking sheets.

2. In a large mixing bowl, combine the oats, wheat germ, millet, almonds, pecans, shredded coconut, sunflower seeds, cinnamon and salt. In another small mixing bowl, whisk together the sugar, maple syrup, canola oil and vanilla until well combined. Add the wet ingredients to the dry, mixing to evenly distribute. Spread the granola on the baking sheets and bake until golden, about 20-22 minutes, rotating the pans half-way through and running a metal spatula beneath the granola to evenly brown. Allow the granola to cool completely on the pans, then toss with the dried Bing cherries and store in an airtight container.
