This recipe is always such a lovely dish, at fancy dinners and outdoor barbecues alike. I use this Sun-dried Tomato Compote Recipe for this recipe, but feel free to use a store-bought variety or other tomato compote recipe of your choice.

Ingredients:
- 2 pounds salmon fillets
- Salt, pepper and garlic powder
- 1/2 cup soy sauce
- 1/3 cup olive oil, plus more for the grill
- 1/3 cup water
- 1/2 cup brown sugar
- 3 T. fresh lemon juice

- 1 Recipe Sun-Dried Tomato Compote (see Head Note)
Preparation:
1. Prepare the salmon and marinade. Rub the fillets with salt, pepper and garlic as desired. In a small mixing bowl, whisk together the soy sauce, olive oil, water, brown sugar and lemon juice until well blended. Place the salmon in a casserole dish and pour the marinade over the fillets. Cover and refrigerate for 2 hours to overnight.
2. Make the Sun Dried Tomato Compote according to the recipe. (This takes about 1 1/2 hours from start to finish.)Set aside the compote until ready to grill. If you've made and refrigerated the compote in advance, reheat the compote until hot to serve.
3. Grill the salmon. Heat the grill to medium heat. Once heated, lightly oil the grill and place the marinated fillets on the grill. Cook until the fish is cooked through and flakes easily, flipping once half-way through, about 15 minutes. Place the cooked fillets on individual plates or in a casserole dish, spoon over warm compote, and serve.
