This recipe is easy to make and it allows for a lot of variance; if you want a spicy cheese dip recipe, for example, you can add your favorite homemade or store-bought salsa, fresh jalepenos or just a bit of cayenne pepper. Nutritional yeast can be found in health food stores, and it is usually available in both packaged form and in the bulk food section.
Makes about 2 cups
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Ingredients:
- ¼ cup flour
- ½ cup nutritional yeast
- 1 ½ t. salt, plus more to taste
- 2 1/2 cups almond milk, or other non-dairy milk alternative
- ½ cup finely ground raw cashews
- 2 t. apple cider vinegar
Preparation:
1. In a small saucepan off heat, mix together the flour, nutritional yeast and salt until well combined. Add 1/3 cup of the almond milk and mix until smooth. Add the remaining almond milk, stirring until smooth.
2. Place the saucepan over medium heat and add the cashews and vinegar. Stirring constantly, cook until mixture is thick, about 4-5 minutes. Remove the pan from heat, transfer the dip to a serving dish and serve hot. (If you want to serve this dip cold or want to make the dip in advance, place a piece of plastic wrap directly on the surface of the dip and refrigerate to prevent a skin from forming.)
