Cheddar & Black Bean Dip

This dip is easy to prepare, healthy and delicious as an appetizer with chips, pita bread or veggies. Alternatively, you can use this as a sauce for quesadillas or burritos.

Makes about 3 cups.

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

  • 1 ½ cup soy mayonnaise
  • ½ cups soymilk powder
  • ½ cup nutritional yeast
  • 1 T. Dijon mustard
  • 1 T. whole wheat flour
  • 1 12-oz. can no-salt-added black beans, drained
  • 1/3 cup water
  • Salt and pepper, to taste

Preparation:

1. In a heavy-bottomed skillet or saucepan over medium heat, whisk together the soy mayonnaise, soy milk powder, nutritional yeast, mustard and flour, stirring until well combined.

2. Add the black beans and water to the skillet, stirring until well combined. Cook until slightly thickened, about 2-4 minutes. Remove skillet from heat and salt and pepper to taste.

3. In a blender, puree about 1 cup of the mixture until creamy. Mix this with the remaining mixture in a serving bowl and serve warm with chips, pita or veggies.
