This easy, vegan delight is the perfect indulgence on a warm summer day, but it is also great for special, fun days like Valentine's Day. I prefer to garnish my milkshakes with a sprig of fresh mint, chocolate and a strawberry, but feel free to dress your shake up however you like!

- 1 quart dairy-free soy or rice ice cream
- 1 16-oz bag frozen strawberries, thawed
- ¼ cup coconut milk
- ¼ cup dairy-free almond milk, plus more if desired
- 1 T. maple syrup
1. In a blender, combine all of the ingredients and blend until thick and creamy. Add more dairy-free almond milk if desired. Serve cold, garnishing with a sprig of mint, dairy-free chocolate, nuts, or strawberries.
