This recipe is a favorite lactose-free rendition of the classic drink, suitable for those in the dairy-free and vegan communities.
- 1 T. cocoa powder
- 1 1/2 t. olive oil
- 2 T. maple syrup
- 1 cup coconut milk
- 2 cups dairy-free vanilla ice cream
- 1 1/3 cup irish whiskey
- 1 T. strong prepared espresso
- 1/2 t. almond extract
1. In a small bowl, combine the cocoa powder, olive oil and maple syrup until combined. Place the cocoa mixture and all other ingredients in a blender and process until smooth. Chill in the refrigerator for at least 30 minutes before serving. Mix well before serving.
