Cinnamon Custard

Serve this custard on its own, in an almond tart crust, or with a warm dessert like this apple bread pudding, for a guilt-free dairy-free treat! Healthy and easy to make, this is a staple around my house.

Feel free to experiment with this custard-- the longer you allow it to chill in the refrigerator, the firmer the custard will become. NOTE: although many recipes will require that you drain your tofu, for this recipe, just open the box and blend along with the water in the packaging.

Makes about 2 cups

Prep Time: 5 minutes

Ingredients:

  • 1 12.3-ounce package firm silken tofu (not "lite" variety)
  • 1/3 cup agave nectar
  • 1/2 t. cinnamon
  • 1/4 t. ginger
  • 1/8 t. nutmeg
  • 1/4 t. salt, plus more to taste

Preparation:

1. Place all ingredients in a blender and process until smooth. Add salt to taste and blend again until combined. Refrigerate until desired consistency and temperature and serve.
