Bananas and chocolate were made to go together, and the combination is what really makes these parfaits special. Perfect for kids and adults with allergies to dairy or lactose intolerance, these are also great for anyone who is just trying to cut back on some of their dairy consumption for health reasons. (But these treats are so good, you wouldn't know that they are healthier at all!)
Feel free to add additional fruits and even nuts or coconut to your parfaits if desired. I even like to top mine with a healthier Chocolate Syrup and Vegan Whipped Cream if I have time!

Yield: 4 large parfaits
Ingredients:
- For the Banana Pudding:
- 3 egg yolks, beaten
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/8 teaspoon salt
- 1 1/2 cups soy milk or other dairy-free milk alternative
- 1 teaspoon banana extract
- 2 medium firm bananas, sliced very thin
- For the Chocolate Pudding:
- 1 Recipe Vegan Chocolate Pudding
- To Assemble the Parfaits:
- 2-3 medium-sized bananas, sliced
Preparation:
1. Prepare the banana pudding. Place the egg yolks in a small heat proof bowl. Set aside. In a small saucepan over medium heat, combine the sugar, cornstarch and salt. Gradually whisk in the soy milk, and cook, stirring constantly, until the mixture comes to a low boil. Continue to stir and cook for 1-2 minutes after the first bubbles appear. Remove the pan from heat. Whisk several tablespoons of the custard mixture vigorously into the egg yolks, taking care not to cook the eggs. Add the egg mixture to the rest of the pudding mixture in the saucepan and cook over medium heat, stirring constantly until just thickened. Remove the pan from heat and stir in the banana extract. Transfer the mixture to a small heatproof bowl just big enough to fit, cover with plastic wrap (placing the wrap directly on the top of the custard to prevent a skin from forming), and place in the refrigerator to chill for 2-4 hours or until set. Fold in the banana slices once chilled completely.
2. Prepare the Vegan Chocolate Pudding according to the recipe. Chill the pudding completely in the refrigerator before assembling the parfaits.
3. Assemble the parfaits. In four parfait glasses or other fluted glasses, portion half of the chocolate pudding. Place a layer of fresh banana slices on top of the chocolate pudding. On top of the fresh banana slices, portion the banana pudding among each of the glasses until all is used. Top with more fresh banana slices. Top with a final layer of chocolate pudding and several slices of banana for garnish. Chill the glasses in the refrigerator for 10-20 minutes and serve cold with Chocolate Syrup and Vegan Whipped Cream if desired.
