Healthier than traditional cookies, these little treats are easy to make, too! Feel free to add in dried fruits and nuts of your choice for variation!

Ingredients:
- 1 cup pureed Mejool Dates
- 1/2 cup finely shredded coconut, plus more for coating
- 1/2 cup quick-cooking oats
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries
- 3 T. tahini paste
- 3 T. maple syrup or agave nectar
- pinch of salt
Preparation:
1. Line a baking sheet with parchment paper. Mix all of the ingrendients until well combined. Form into 1 " balls and roll each in shredded coconut, placing on the prepared sheet as you work until all of the "dough" is used up. Refrigerate for at least 1 hour and enjoy!
