Dairy-Free Molasses Cookies.

These cookies are so simple to make and delicious, and because they're prepared with heart-healthy olive oil, they're significantly healthier than traditional cookies prepared with butter.

Makes about 2 dozen cookies


  • 2 1/3 cup all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 2 t. ground ginger
  • 1 1/2 t. ground cinnamon
  • 1/4 t. nutmeg
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/8 t. salt
  • 1/2 cup blackstrap molasses
  • 1/2 cup olive oil
  • 1/2 t. cider vinegar
  • 1 egg, lightly beaten


1. Preheat the oven to 350 F. Set out 2 large ungreased baking sheets.

2. In a large mixing bowl, sift together the flour, sugar, spices, baking powder, baking soda and salt. In another mixing bowl, whisk together the molasses, olive oil, cider vinegar and egg until well combined. Make a well in the dry ingredients, and add the wet ingredients to the dry, mixing until the dough just comes together. Place the mixing bowl in the refrigerator, covered, for 15 minutes.

3. Using your hands, roll the dough into 1" balls and place on the ungreased baking sheets. Bake for 12-15 minutes, or until the cookies are slightly golden on the bottom and the tops have cracked. Sprinkle with powdered sugar after removing from the oven. Allow the cookies to cool on a wire cooling rack, and serve at room temperature.
