Peanut Butter Fudge

Perfect for anytime of year and so easy to make, this is a sweet, rich snack that everyone can enjoy.

This easy, peanutty delight is always a hit at kids' birthdays or holiday parties, but it's so easy and quick to make that it's also a convenient dessert for a weekday sugar craving.

Makes one 9" x 13" pan of fudge

Prep Time: 5 minutes
Ingredients:
  • 4 cups powdered sugar
  • ¼ cup dairy-free soy margarine, “stick” variety
  • 4 oz. dairy-free cream cheese (1/2 tub), such as tofutti brand
  • 1 cup dairy-free unsalted crunchy peanut butter
Preparation:

1. In a large mixing bowl using an electric hand mixer, cream together the powdered sugar, soy margarine and dairy-free cream cheese for about 3-4 minutes, or until smooth. Add the peanut butter and continue mixing until the mixture is well combined and very thick. Spread the mixture into a 9” x 13” baking dish lined with wax paper or parchment and refrigerate until set, about 2 hours. Cut into squares and serve.
