Marzipan is a terrific recipe for dairy-freers (and everyone else!) who love sweets but cannot have candies with milk ingredients. Although there are commercial marzipan candies available that do not contain dairy, many store-bought marzipans use dairy-derived ingredients as preservatives or are made in facilities that also process milk ingredients. But the good news is that this recipe is so easy that you'll never want to buy marzipan again!

Ingredients:
- 2 1/4 cups confectioners sugar
- 3 cups finely ground blanched almonds
- 2 large egg whites
- 1 tsp. vanilla extract or lemon juice
Preparation:
1. In the bowl of a food processor, combine the confectioners' sugar with the finely ground almonds until well mixed. Add the egg whites and vanilla extract or lemon juice and process until forming a stiff paste. On a clean work surface, knead until smooth. Wrap tightly in plastic wrap and store in the refrigerator until ready to use.
To Make Marzipan Candies:
Roll your homemade marzipan into tiny balls, then dredge them in a powdered sugar, sweetened coconut flakes or a combination of cocoa powder and powdered sugar. Place in small candy cups and serve.
