These raw chocolate truffles are simple to prepare, but as with any raw recipe, the quality of your ingredients are of paramount importance. This recipe is courtesy of Michelle Master at Vivapura, who knows her stuff when it comes to raw food!
Note:It is important to use powder Vivapura cacao powder in this recipe to achieve the desired results as it is truly raw cacao powder and therefore richer and less refined. A non-raw cacao powder will produce a drier truffle so, if you decided to use this, use less lucuma powder to adjust accordingly.

Yield: About 12-14 truffles
Ingredients:
- 1 cup Vivapura cacao powder
- 5 T lucuma powder
- 1 tsp vanilla powder
- ⅛ tsp sea salt
- Pinch of cinnamon and cayenne (optional)
- ½ cup Cocopura coconut oil , melted
- 2. T yacon syrup or sweetener of choice (honey,
- maple syrup, etc)
Preparation:
1. Combine cacao powder, lucuma, vanilla powder, sea salt, cinnamon and cayenne (if using), and melted coconut oil in a bowl with a spoon, stirring to form a thick paste. Add yacon or sweetener of choice and mix until well-combined. Add more lucuma if the mixture is not thick enough.
2. Scoop balls of the paste with a melon baller or spoon and roll into balls. Roll in cacao powder or lucuma (cacao powder for a darker truffle or lucuma to soften the cacao) and chill for 10-15 minutes to produce a truffle that is still soft inside. Chill longer for a firmer truffle...Enjoy!
