This recipe is so easy to make, but it is definitely my favorite mayonnaise recipe; I like it even more than mayonnaise recipes that use eggs! Feel free to add fresh herbs and spices to add some flair to your mayo!
Makes about 2 cups

- 1 12.3-ounce box extra firm silken tofu, drained
- 3 T. olive oil
- 2 T. fresh lemon juice
- 1 1/2 T. agave nectar
- 1 t. salt, plus more to taste
1. In a blender, process all of the ingredients until creamy. Transfer to a jar and refrigerate until ready to use.
