With a biscuit-top crust, this dairy-free chicken potpie is an elegant and impressive meal served in two deep souffle or gratin dishes. Soymilk, soy creamer and soymilk powder serve as the base of the creamy sauce, dressed up with onions, carrots, broccoli and shelled edamame. This is a great way to use leftover chicken and perfect for a lunch or dinner entree.

Ingredients:
- ½ cup chicken or vegetable broth, store-bought or homemade
- ½ cup fresh broccoli, chopped into bite-sized pieces
- 1 cup chopped or julienne carrot
- ½ cup chopped onion
- ½ cup frozen shelled edamame
- 1 cup soymilk
- 1 cups soy creamer
- ½ cup dry soymilk powder
- 1 cup chopped roast or baked chicken
- Salt and pepper, to taste
- ¾ cup flour
- 2 t. baking powder
- 1/8 t. salt
- 3 T. dairy-free soy margarine, such as Willow Run
- 1/3 cup dairy-free soymilk
Preparation:
1. Preheat oven to 400 F. Lightly oil 2 deep-dish souffle or gratin dishes or four individual souffle dishes. Set aside.
2. Make the filling. In a samll saucepan over low heat, combine the stock, broccoli, onions, carrots and edamame, and heat until just warm, about 3 minutes. Add the soymilk, soy creamer and soymilk powder, mixing until well combined. Add chicken, and cook until just thickened. Salt and pepper to taste. Pour Into prepared dishes and set aside.
3.Make the biscuit topping. In a food processor, combine the flour, baking powder and salt and mix until blended,about 30 seconds. Add soy margarine and process until mixture resembles fine crumbs, about 1 minute more. While machine is still running, add soymilk gradually until mixture just holds together and pulls away from the sides of the bowl. (The dough should be sticky and soft but should not stick to your hands.)
4. Pull dough in small 1-2" sections and lay directly on top of the filling in the prepared dishes, covering as much of the exposed mixture as possible. (Biscuit crust will expand as it bakes, however, and will fill in any gaps.) Bake in preheated oven for about 35 minutes, or until golden brown. Serve hot.
