Baked Polenta

Easy to make and so comforting, this polenta is perfect served with a hearty chili or stew.

Polenta is one of the cheapest and easiest ways to make a dish that is comforting, beautiful and healthy. This recipe is incredibly versatile, feel free to add whatever herbs or other seasonings suit your palate.

Serves 4 to 6

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 1 15-oz can low-sodium vegetable stock
  • 2 cups unsweetened plain almond milk or soy milk
  • 1 t. dried oregano
  • 1 t. dried basil
  • 3/4 t. sea salt
  • 1 cup coarse cornmeal
  • 1/3 cup nutritional yeast

Preparation:

1. Preheat the oven to 375 F.

2. In a small saucepan over medium-high heat, bring the vegetable stock, almond milk, spices and salt to a rolling boil. Add the polenta gradually, stirring constantly to avoid clumps. Add the nutritional yeast and stir constantly until the mixture is thickened and consistent. Pour the batter into the prepared dish and bake until golden, about 10-15 minutes. Serve warm.
