This quick bread is a light and healthy sweet treat for a tasty breakfast or snack. For a sweeter or dessert recipe, try icing this bread with dairy-free chocolate ganache or a homemade icing of your choice. This recipe can be made vegan by substituting the egg white by using the equivalent of 2 eggs of Egg Replacer and replacing the honey with 6 T. maple syrup.
Makes one 9" x 5" loaf.

Ingredients:
- 1½ cups white flour
- ½ cup oat flour
- ¼ cup cocoa powder
- 1 T. baking powder
- ½ t. cinnamon
- ¼ t. salt
- 1 large egg white
- ½ cup honey
- ½ cup plain unsweetened soymilk
- 2 large bananas, mashed
- 1/3 cup water
Preparation:
1. Preheat the oven to 350 F. Lightly oil or line with parchment a 9"x 5" loaf pan. Set aside.
2. In a small mixing bowl, combine the flours, cocoa powder, baking powder, cinnamon and salt. Set aside.
3. In a medium-sized bowl, using a hand mixer, beat the egg white with the honey on low speed until well mixed, about 1 minute. Add in the soymilk, mashed bananas and water, beating until well combined.
4.Add the dry ingredients to the wet, mixing until just combined. Pour the batter into the prepared pan. Bake for 30-40 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Serve warm or at room temperature.
