This bread is perfect with coffee or tea; it has just the right amount of sweetness and moisture without the density of most vegan quick breads.
Makes one 9"x5" loaf

Ingredients:
- 3 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup white granulated sugar
- 1 T. baking powder
- 1 t. baking soda
- 1/4 t. salt
- 1 3/4 cups water
- 3 T. soy mayonnaise
Preparation:
1. Preheat the oven to 325 F. Lightly oil a 9"x5" loaf pan and set aside.
2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the water and soy mayonnaise until well combined. Add the wet ingredients to the dry, mixing until just combined. (You may need to add 1-2 T. of water if your dough is too dry!). Spread the batter in the prepared pan and bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf emerges clean. Allow the bread to cool completely in the pan on a wire cooling rack. Serve warm or at room temperature.
