This bread is perfect with coffee or tea; it has just the right amount of sweetness and moisture without the density of most vegan quick breads.

Makes one 9"x5" loaf

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Ingredients:

  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup white granulated sugar
  • 1 T. baking powder
  • 1 t. baking soda
  • 1/4 t. salt
  • 1 3/4 cups water
  • 3 T. soy mayonnaise

Preparation:

1. Preheat the oven to 325 F. Lightly oil a 9"x5" loaf pan and set aside.

2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the water and soy mayonnaise until well combined. Add the wet ingredients to the dry, mixing until just combined. (You may need to add 1-2 T. of water if your dough is too dry!). Spread the batter in the prepared pan and bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf emerges clean. Allow the bread to cool completely in the pan on a wire cooling rack. Serve warm or at room temperature.

Good as is, but could be better with some tweaking, Member catohound

I didn't have vegan mayonnaise, so I subbed a little over 2 Tbsp coconut oil melted and mixed with 1 Tbsp cornstarch. I don't think that's a thing, I just thought it might be a good sub based on what I had. In case the baking soda needed some acid from the mayonnaise I wasn't putting in, I added a Tbsp of vinegar to the measuring cup before measuring out the water in the recipe. I also added 3/4 cup vegan dark chocolate chips. The loaf had nice texture and rich chocolatelyness. If I hadn't put in the choc chips it wouldn't have been at all sweet, so if you like sweet add more sugar. It's moist enough, but only just enough. I don't know if using mayonnaise instead of oil would have changed that. It was stored in a plastic bag for a couple days before we finished it off and it didn't lose anything, which was good.
