This apple bread recipe is significantly healthier than traditional apple bread recipes that use butter and eggs, and it's suitable for those following a dairy-free or vegan diet. Feel free to make minor adjustments and substitutions to this recipe; sometimes I've added raisins, other nuts or flaxseeds, and sometimes I've substituted wheat germ instead of corn meal. It's versatile, so make it your own!

Ingredients:
- 2 1/4 cups all-purpose flour
- 3/4 cup whole wheat flour
- 1/2 cup white granulated sugar
- 1/4 cup rolled oats
- 1/3 cup corn meal
- 1 T. baking powder
- 1 t. baking soda
- 1 t. salt
- 1 t. ground cinnamon
- 1/4 t. ground ginger
- 1/4 t. ground nutmeg
- 1 2/3 cups plain soy milk
- 1/4 cup canola oil
- 1/4 cup applesauce
- 2 T. fresh lemon juice
- 2 T. molasses or, alternatively, maple syrup
- 1 cup coarsely chopped peeled apple pieces
- 1 cup coarsely chopped raw walnuts (optional)
Preparation:
1. Preheat the oven to 325 F. Lightly oil a 9"x6" loaf pan and set aside.
2. In a large mixing bowl, sift together the flours, sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. In another bowl, whisk together the soy milk, oil, applesauce, lemon juice and molasses. Add the wet ingredients to the dry and mix until just combined, taking care not to over mix. Fold in the apple pieces and the walnuts. Transfer the dough to the prepared loaf pan and bake until golden brown, about 70-75 minutes. Allow the bread to cool completely. Serve warm or at room temperature.
