Today is National Pecan Sandies Day in the U.S., so I thought I'd celebrate with y'all with a veganized version of the classic cookie! I often forget about these humble cookies because, well, pecans are not pantry staples for me. They are intentionally purchased, and intentionally used for specific dishes.
Not to belabor the point, but pecans are not my favorite nut. In fact, they're not even in my top 5, at least on their own. But some of my favorite childhood sweets wouldn't be what they are without them; pecan pie, pecan crusts, pecan cookies--you get the picture. A couple of years ago, I was reminded of this when my husband brought home about 2 lbs. of pecans one day ("They just looked amazing," he'd said) that inspired me to veganize the classic pecan cookie, the pecan sandie. This Vegan Pecan Sandies Recipe is what I came up with, and the cookies were phenomenal. (I may not always have the best memory, but I just made them again last week and trust me, they're still phenomenal!) Rich, lightly sweet and infinitely healthier than traditional butter-and-egg cookies, these are an easy, simple dessert you can go a little nuts over.
