February is National Hot Breakfast Month in the U.S., so before it's over, I thought I'd share a few favorites to warm up your mornings during the last week of this month! This Breakfast Quinoa has been a favorite of mine for years, prepared with quinoa, almond milk, banana, coconut, and a touch of sweetener. In addition to comforting and healthy, it's also dairy-free, gluten-free, and vegan. Not bad, eh?
