Quinoa Pilaf with Chickpeas, Cranberries, and Toasted Pine Nuts

Quinoa PilafQuinoa is one of those foods that you either love or are completely indifferent about. I tend to fall into the latter category, but that's only because I'm usually not thrilled with how quinoa is prepared and served. It's often presented to me as some overly-oily, clumpy disaster with tons of flavors just flying around without purpose. I know, I know. It sounds harsh. But, because quinoa is pretty healthy and inexpensive, I want to like it.

This Quinoa Pilaf is one of those dishes that I've come up with over the years and truly enjoy eating. Because it's so easy to prepare, I like making it, too--especially on weeknights when I'm *this close* to ordering take out at the Himalayan restaurant down the street. Prepared with virgin coconut oil, chickpeas, cranberries, and toasted pine nuts, this lightly spiced dish is one you'll enjoy eating on a weeknight and then taking to work with you on the next day.
