Dairy-Free Lemon Bars RecipeThere are few flavors that excite me as much as tart, lemony sweets. That twinge with the first bite, that aftertaste in the back of my mouth--it's heavenly. Couple that with a rich crust and a dusting of powdered sugar and you've got something really special.

Well, I suppose lemon bars are pretty popular, so much so that you can buy a mix and make them from a box. But when I see those boxed variations in grocery markets, I'm sad; it doesn't take all that much to make your own lemon bars, and oh my are homemade bars so much better. And especially dairy-free ones! So maybe saying that all lemon bars are special is wrong. Not all lemon bars are alike, after all. (This is true of cakes, too; bring a homemade cake to a party, and even someone who's never had a homemade cake before in her life will KNOW without a doubt that your cake is homemade and the best she's ever had.)

Most lemon bar recipes are prepared with a buttery crust, but these Dairy-Free Lemon Bars are 100% dairy-free, lactose-free treats that everyone can enjoy. Make them for a New Year's party next week or just to brighten your day. They're easy to make, beautiful, and so, so good.
