Sugar cookies should be simple, but over the years I've encountered so many bad vegan sugar cookie recipes that today, with all of the holiday-cookie-baking and cookie-countdowning going on, I want to share my own. This Vegan Sugar Cookies Recipe is really simple to make, with simple ingredients and flavors that come together into something, well, really really good--and simple. The recipe needs to chill for about 6 hours, so I usually just let the dough rest in the fridge overnight, then roll it out the following day, bake, and make my icing and add other decorative ingredients, which around this time of year are usually red and green sprinkles.
It sounds like a lot, but I promise you, this recipe is simple, fun and easy, like eating a cookie. It's a great recipe to make with kids or to bring to a vegan holiday party, but remember, have fun!
