The weekend after Thanksgiving is one of portioning, donating and recycling what's left. If your house is anything like mine, you have an abundance of leftover staples like breads, which often get pushed to the side in the face of potatoes, cranberry sauce, pies, and other dishes. There are a ton of things you can do with leftover bread--you can use it for sandwiches, bake some croutons, or grind it into breadcrumbs for a casserole--but by far my favorite thing to make with day-old bread is bread pudding. Yes, even bread pudding can be made deliciously dairy-free. And vegan.
Although traditional bread puddings usually call for milk or cream, butter, and eggs, this Dairy-Free Pumpkin Bread Pudding is prepared with almond milk and coconut milk and no eggs, which is replaced with pureed silken tofu. It's a healthier fall comfort dish that's a great way to keep the Thanksgiving festivities going into the weekend.
