Vegan Pumpkin SoupContinuing on with the Thanksgiving recipe countdown, I'd like to share one of my favorite non-pumpkin-pie pumpkin recipes that works well as a side-dish to non-vegan Thanksgivings or even as a main dish for vegan ones. This creamy Vegan Pumpkin Soup is a simple vegan first-course or starter for any Thanksgiving feast, prepared with pumpkin, onion, garlic, leeks, apple, coconut and almond milk, and fall spices like ginger, cinnamon and nutmeg. This soup is easy to make in under an hour, but it also tastes wonderful the second day after steeping in the spices, so to save counter space on Thanksgiving Day, you can prepare your soup a day ahead of time.
