Can you believe that we only have 16 days before Thanksgiving? If you all are anything like me, you're already working on the menu and reciting the list to your spouse, friends, and anyone who will listen to your culinary day-dreaming. We have more of a family-and-friends Thanksgiving at our home, so the house fills up with 30+ bodies and our long dining room table, stove-side bar, and kitchen table are all occupied with food and people, so I always am making my list and then adding, revising, and adding some more until we somehow have leftovers to send home with everyone. Phew. So, yes; we have 16 days until the table is set and we're all giving thanks and enjoying a lovely meal and conversation, so it's time for the recipe countdown to begin!
Today, I thought I'd share a fun, dairy-free recipe that always pleases a crowd: Dairy-Free Pumpkin Meringue Pie. Prepared with a dairy-free pie crust and sweetly spiced pumpkin filling, and the topped off with pillowy meringue, this is one holiday pie that no one would ever guess is totally dairy-less. (And isn't meringue just such a clever way to make your guests forget about the whipped topping this year?)
