The Dairy-Free Thanksgiving Countdown continues! Today I wanted to share this Vegan Pear Cobbler, which, I will admit, is actually somewhere between a cobbler and a cake. In the past, I've followed other pear cobblers but was always somewhat disappointed by the outcome: pears, unlike apples, do not remain firm enough for my liking when baked, so in a cobbler they become a little like mush. (I do not like this.)
To avoid a mushy pear dish, this Pear Cobbler is prepared by placing one layer of sugared pears in the bottom of a baking dish and then topping it with a biscuit cobbler topping that has been mixed with several cups of sliced pears. The result is something that was fruit-filled and rich, but not at all mushy. (YUM.) To add your own personal touch to your cobbler, feel free to add dried cranberries or other fruits and nuts of your choice.
