When I looked at the calendar today, I could hardly believe that we are less than 3 weeks away from Thanksgiving Day and that it is time for another Thanksgiving recipe countdown, but it is!! Has 2012 flown by for everyone, or just me?
To kick off the countdown this year, I wanted to share an impressive-yet-simple fall favorite: Baked Stuffed Pumpkin. It's impressive--a whole baked pumpkin stuffed with a savory filling--yet simple and healthy, filled with brown rice, great northern beans, spinach, Daiya, and a few strips of organic turkey bacon. Everyone, dairy-free or not, will be excited when you bring out a whole steaming pumpkin for the table!
