Now that solstice has come and gone, it seriously feels like summer. The days are still ever long, but now that we've passed the official first day of summer, it feels like it's TIME to celebrate the warm season before it's over, you know?
Anyways, that was a round-about explanation for why you might want to make these Dairy-Free Banana Split Cupcakes like I did this weekend. Because they are so fitting for the season, because they are just fun to share with people. Because they're good: dairy-free banana cupcakes are topped with a chocolate ganache, shredded coconut, vegan buttercream frosting and a cherry on top. (The coconut is optional, but the cherry is mandatory. It's a sundae in a cupcake, after all!)
