In honor of National Peanut Butter Lovers Day tomorrow, I thought I'd share some of my favorite nuevo takes on the classic peanut butter and jelly sandwich because, as every dairy-freer and parent of a dairy-free child knows, it is one of the easiest dairy-free lunches around. In airports and at cafes, the PB and J is one of the only sandwiches that, barring any dairy products in the bread, a vegan or person with an allergy to dairy can order without asking for substitutions, and with just three accessible ingredients, it's easy to whip up for school lunches. And so, if you're anything like me, you've eaten and prepared A LOT of peanut butter sandwiches over the years, and it's nice for a change.
After preparing a slew of sandwiches, I've come up with eight sandwiches that are healthy, fun renditions of the classic, including my personal favorite, the Peanut Butter Pomegranate Sandwich. So, if you're looking for a simple, healthy change for dairy-free lunches and you're admittedly a peanut butter lover like myself, look through my list of Peanut Butter Sandwich Recipes and try something new!
