As those of you who have been regularly following my posts documenting my participation in the Project: Food Budget Challenge know, I'm now full-term in my first pregnancy(!). So, while this week's report isn't terrible, it's not ideal and largely due to the fact that we are now making and freezing foods for after our bambino arrives (any day!), so we've been doubling most of our recipes. This week's damage? 98.23 over budget. Ouch.
We weren't spending frivolously, though; we made those meals count! And even our indulgences were pretty lean, both in terms of nutrition as well as spending; outside of a few treats for Mardi Gras earlier this week, the most indulgent thing we enjoyed were these Vegan Applesauce Muffins which are actually kind of healthy. And good. So good, in fact, that we made a batch and froze them for those mornings when we have no energy to make a thing because we've been up all night with our new addition.
