As much as I'd like to be, I am not a "salad" person during the wintertime; although I'm active and I eat healthily, during the cold weather months I'm more inclined to eat cooked vegetables or hearty pureed soups that a cold plate of frisee.
Salads that are based with grains instead of leaves, however, are the perfect compromise; they're hearty and healthy at the same time. This Citrus Bulgur Salad is one of which I'm particularly fond during this time of year when root vegetables and citrus fruits best all the others and seeds just sound like a good idea.
