
So, June 4th is National Cheese Day.
Fine.
In celebration of healthier "cheeses," I thought I'd share my favorite dairy-free cheese recipe: Dairy-Free Herbed Yogurt Cheese. It's my favorite mainly because it tastes great and it tastes the most like cheese (a feat many store-bought dairy-free cheeses have yet to accomplish). Why is this cheese better in my opinion? Well, it tastes similar to cheese because it is prepared in a way that's similar to traditional cheese-making. A tub of plain, unsweetened (this is important) soy yogurt is placed over cheesecloth that is set on a sieve over a bowl, which allows the "whey," or liquid portion, to drain away over several days, leaving a thick, soft soy cheese that's great served with crackers, on a sandwich, or with anything, really.
