Dairy-Free Creamy Basil Pasta Recipe

This weekend at the farmer's market, while I was busily picking my fruits and veggies for the week, I was lured by the potent, slightly sweet smell of fresh basil from one of the stands. I had gone to the market with culinary intentions and dinner plans in mind, but really, after purchasing several bunches of fresh basil, I just wanted to make this Dairy-Free Creamy Basil Pasta, a dish that has been a favorite of mine for years, especially during the late spring and summer months when basil is in season. A nutty, basil-scented cashew cream sauce is tossed with sauteed onions and garlic and served over linguine or fettuccine, then garnished with sprigs of fresh basil and a light sprinkling of salt and pepper. This dish is simple, healthy and so easy to make; it only takes about 10-15 minutes from start to finish, and it's perfect with a glass of wine or a light sweet dessert.
