Good Gravy! (Really) : Dairy-Free Vegan Gravy Recipe

Easy Vegan GravyLike pudding, gravy is one of those comfort foods that crosses cultural boundries and dishes, served over biscuits, potatoes, breads, meats, vegetables, eggs and pretty much anything that calls for something creamy and savory. Also like puddings, most gravies will be loaded with dairy, using either large amounts of butter, milk or cream, though the sauce itself could be based from meat drippings, a meat or vegetable broth, slow-cooked root vegetables, mushrooms and any number of combinations. This dairy-free cream and pepper gravy, however, is completely vegan, low in fat, inexpensive and quite possibly the easiest gravy recipe around, perfect for quick weekday meals or last-minute, tight-budget brunches.

For easy meals during the week, I like to measure out the dry ingredients for these vegan buttermilk biscuits or these baking powder biscuits and store the mixture in an air-tight container in my pantry, so that all that I need to do when I'm craving some casein-free biscuits-n-gravy is finish the biscuits, pop them in the oven, and whip up the gravy while they bake.
