Although it's just the end of April, this weekend on the West coast truly felt like summer. In lieu of the heat, I ended up making this dairy-free strawberry ice cream recipe to pair one of my favorite spring fruits with my favorite summertime dessert. Not only is it one of my simplest dairy-free dessert recipes with only four ingredients, it is also one of my healthiest. Sweetened by only strawberries and honey, this was a truly refreshing and light treat during the warm weekend.
